Farm, Forest & Table
Dining at
Varenui
Every meal is a product of the land beneath your feet — grown in our gardens, gathered from the forest, and prepared by hands that understand both flavour and ceremony.
The table as
an extension
of the land
At Varenui, farm-to-table dining is not a marketing phrase — it is the only logical outcome of where we are. Our gardens produce everything from leafy greens harvested at dawn to rare heirloom varieties cultivated from Pacific seed stock.
Our head chef works in daily dialogue with our gardeners and foragers, building each menu around what is ready — not the other way around. The result is food that changes with the season, with the weather, with the moment.

Three distinct
dining experiences
From a candlelit communal table in the open pavilion to a private feast on your villa deck — each setting is designed to make the meal as memorable as the food.
The Pavilion Restaurant
Our main dining room is a soaring open-air structure woven into the canopy edge. Breakfast, lunch, and a four-course dinner service are offered daily, with a changing menu built entirely from estate produce and local Pacific ingredients.
- Breakfast 7:00 – 9:30 am
- Lunch 12:00 – 2:30 pm
- Dinner 7:00 – 9:30 pm
Private Forest Table
A table for two — or twelve — set within a clearing in the forest, lit by lanterns and the moon. Our team prepares a bespoke seven-course tasting menu, delivered to the table by hand. Available at sunset or after dark.
- Duration 3 – 4 hours
- Minimum 2 guests
- Notice 48 hours advance
Villa & Deck Dining
Every meal available in the pavilion can be arranged for in-villa service — delivered to your deck, your pool terrace, or your bed. A full in-villa menu is also available throughout the day for lighter grazing.
- Available 7:00 am – 10:00 pm
- Setup 30 min notice
- Grazing menu All day

Tasting Menu
Wet season — seven courses
Our tasting menu changes with every passing week. What follows is a representation of the current season — some dishes will be on the table when you arrive, others will have evolved into something new. That is the point.

From our
one-acre kitchen garden
Our estate runs an organic kitchen garden that supplies roughly 80% of all produce served at the table. The remaining 20% comes from a network of local growers on the island who share our commitment to natural growing methods.
Guests are welcome to join our head gardener for a dawn walk through the plots — tasting as you go, asking questions, understanding the arc from soil to plate that makes every meal here specific to this place and this moment.

Our bar programme mirrors the kitchen's philosophy — seasonal, botanical, and rooted in what grows on the estate. Every cocktail begins with an estate ingredient: fresh coconut water, wild-pressed citrus, house-fermented tepache, or cold-brewed botanical tea.
